Creative Combos

This month I created two different combos featuring some interesting blends of ingredients that are relatively easy to make, & provide a hearty yet light & fresh-style meal.

Items that you’ll need:

  • A medium-size cooking pot, (for the quinoa-brown rice blend.)
  • A medium-size bowl to mix your ingredients in.

CREATIVE COMBO I. Ingredients/Instructions:

  • Pre-cook 1 Box Near East Quinoa-Brown Rice Blend

(Flavor: Roasted Red Pepper & Basil) (Women 1/2 cup, Men 1 cup)

  • 1/2 cup organic baby leaf spinach
  • 1/2 cup organic shredded red cabbage
  • 1/2 cup organic baby leaf arugula
  • 1/2 shredded cucumber
  • Dice Trader Joe’s Grilled Balsamic & Rosemary Chicken Breast

(No cooking is necessary, Women 2 oz., Men 4 oz.)

  • 1 can Nature’s Promise organic kidney beans

(Women 1 oz. , Men 2 oz.)

  • 2 tbsp diced scallions
  • 1/2 cup roasted red pepper
  • 2 tbsp minced fresh basil

 

 

 

Mix all the ingredients together & top with a drizzle of olive oil.

Serve & enjoy!

 

CREATIVE COMBO II. Ingredients/Instructions:

 

  • Pre-cook 1 Box Near East Quinoa-Brown Rice Blend (Flavor: Rosemary & Olive Oil) (Women 1/2 cup, Men 1 cup)
  • 1/2 cup organic baby leaf spinach
  • 1/2 cup organic shredded red cabbage
  • 1/2 cup organic baby leaf arugula
  • 1/2 shredded cucumber
  • Dice pre-grilled flank steak marinated in Lea & Perrins Worcestershire Sauce & a pinch of minced garlic

(Women 2 oz., Men 4 oz.)

  • 1 can Nature’s Promise organic black beans

(Women 1 oz., Men 2 oz.)

  • 2 tbsp diced red onion
  • 1/2 sliced avocado
  • 2 tbsp minced English Thyme

Mix all the ingredients together & top with a drizzle of olive oil.

Serve & enjoy!

These two recipes may be used for Meals 2 or 3 on the Remedy Recipes format.

Nature’s Promise items as well as Near East Quinoa-Brown Rice Blend may be purchased at Stop n Shop. The chicken is available ONLY at Trader Joe’s. Uncle Giuseppe’s Grilled Balsamic Chicken may be used as well.
