This is a great Mother’s Day brunch selection! Special thanks to MJ for the suggestion of this adaptation of my “Oatmeal Pancake” recipe from my best selling book, Remedy Recipes! (Page 51) I hope you enjoy this crispy, light, & delicious meal! Both this recipe, and last month’s Remedy Recipes Oat & Protein Muffins are the perfect meal, not only for breakfast, but at other meals as well! This may be used for Meals 1, 2, & 3 on the Remedy Recipes format, using the above mentioned portions.

Mangiare, Piaccia! Eat, Enjoy!
